      The cookie is soft and chewy with the right amount of molasses. If molasses can be too overpowering for your taste, you may like this cookie.

      These cookies are ones I always make for Christmas. The favorite filling is apricot, but this year I tried a Cranberry-orange filling which was also delicious. Rather than scoop out the center of the cookie, I push it down with a measuring spoon. It makes the edges less smooth, but it's less time consuming.

      This is the 3rd recipe I've made from this book, this week. I am working from back to front in publication date of my cookbook collection, in an attempt to cull unused cookbooks. After less than exciting outcomes in the first two, this one is a winner. I did have to make small changes due to inventory but I don't think they made the recipe any better than written. Changes were as follows: steeped raisins in hot water to plump them and let them cool, used pineapple pieces from 2 Dole lunch box fruit bowls (water drained), 1/8 cup of minced/diced pecans (left over from Christmas). I baked at 350 as instructed, for 60 minutes, should have pulled it at 50-55 minutes. The sides were very slightly dried out but nobody cared. Very tasty. The success of this recipe earned the book a 4th try.

  • Chocolate swirl banana cake

      I questioned the pan size as I was preparing ingredients. I wish I would have listened to myself. The cake was near raw in the center while the sides were browning. I would consider trying this again but using a bundt pan. However, I have multiple other "banana/chocolate" recipes that I would select befor this one.
