  • Gorgeous roasted vegetable curry

      This was very tasty. I didn't have pumpkin so subbed in beetroot, creating a lovely colour to the sauce. Perhaps it was the just picked garden fresh basil, coriander and mint that made the sauce so nicely balanced - worth trying/ repeating!

      Favourite crumble recipe but needs less sugar. Add chopped almonds.

      I used fresh, cooked beetroot instead of tinned as I happened to have some. It was delicious!

  • Carrot dip

      I've tried a few carrot dip recipes and this is the best one so far. The carrots take around 40 minutes to roast, not the 20 in the recipe. Really recommend making this the day before, it improves overnight

  • Peanut butter parfait with chocolate and butterscotch

      This was the first time I've made a parfait and it was easier than I expected. The parfait was very nice and not too sweet. I served it with caramel bananas and some chocolate, but I think that the butterscotch sauce would have made it, I regret leaving it out. Will try it again for sure and make all of the elements.
