This recipe is part of the "Summer One-Pot Family Meals" menu on P22. Can substitute freekeh or millet for bulgur, canned tomatoes with juices for fresh tomatoes, and crushed red pepper flakes for Maras pepper.
Where’s the full recipe - why can I only see the ingredients?
Accompaniments: Classic caponata: eggplants, olives, and capers in sweet-and-sour sauce; Okra and zucchini in harissa-tomato sauce; Tomato and olive oil scrambled eggs; Braised kale with peppers; Laurent Gras's ratatouille Niçoise; Eggplants imam bayeldi, stuffed with onions, peppers, cheese, and nuts; Zucchini rolls stuffed with halloumi
Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.
