    Agree with the previous poster-- this is absolutely delicious freshly made and cooled to room temp. Would be great for a picnic or a potluck since I think it could sit around for a few hours and hold up fine. A couple of days in the fridge though, and yuck-- it lost all the fresh crisp acidic brightness and the rice began to break down. Would absolutely make again, but only when I plan on serving enough people to finish it all.

    This was good but terrible as a leftover, when the flavors all blended together and became muddy and unappealing.
