Can substitute nixtamal for masa harina; chorizo, store-bought longaniza sausage or another smoked sausage for the book's "Smoked sausage of Valladolid" recipe; Seville oranges for limes, oranges, and grapefruits; and a combination of arbol chiles, guajillo chiles, and ancho chiles for chiles de país.
