    We love the hit of mustard & the use of a (homemade) relish in the dressing but we also like a bit more of an acidic hit so I added a splash of vinegar + some pickled Fresnos. I made 1/3 of the dressing, cooked 20 oz of potatoes & scaled everything else to 1/4. We really enjoyed this last night & are happy to have some for today's lunch. I had extra dressing (as expected), mixing in a big spoonful of horseradish to use as a spread on our steak sandwiches which was also really good :)

    This was good, but not my favorite version of mustardy potato salad (I prefer the one from Jubilee). Solid, though.

    Made it again using a mixture of mayonnaise and plain yogurt, which worked well.

    I used about 2/3 the bacon and it was enough for us. I omitted the jalapeno because my son can't eat spicy food. We could not stop eating this potato salad - it was soooo good.
