Accompaniments: Castellucio lentils and salsa rossa; Poached potato, grilled radicchio, oregano and anchovy; Cannellini beans, king cabbage and pancetta; Dijon mustard mashed potato, grilled marinated radicchio and pickled red onion; Runner beans, red pepper, basil and crème fraîche; Stewed bobby beans; Baked borlotti beans, coco blanc or cannellini and salsa rossa/verde
