      This recipe is REALLY delicious; especially kind to my low-carb diet (added ditalini pasta to G’s bowl). Used cooking grade olive oil for the pot and a high end EVOO for the bowl. First tasting was quite bitter, even considering the homemade chicken bone broth, however, seasoning in turn and, wf addition of Parmesan & the EVOO, sweetened the “marriage”to deliciousness. Nice way to merge escarole from garden to table.
