  • Junk in da trunk

    • EmilyR on March 01, 2025

I saw these on goldbelly and decided I could make them myself. I froze them for over an hour and baked them from that, so it took a couple of extra minutes to bake. These are good cookies if not a bit oily. I think I would doctor up a more beloved cookie recipe with a similar amalgamation of “kitchen sink” aspects. I will stand by salt and vinegar chips, pretzels and chocolate chips in these.

  • Extreme chocolate biscotti

    • hillsboroks on December 22, 2016

Extreme chocolate biscotti resulted in extreme liking from the guys at my house. These cookies baked up nicely and the use of the tangerine zest is a must. It adds a wonderful flavor tone that really takes this cookie up a notch. I used Scharfen Berger cocoa and Scharfen Berger 60% dark chocolate. My only change is that next time I would divide the dough in two and make two rolls for the first bake. With all the dough in one single roll on the baking sheet I ended up with really long biscotti after it spread. While they tasted great I was after somewhat smaller biscotti to put on Christmas cookie trays and realized later that most other recipes called for dividing the dough to make smaller biscotti.

  • Bittersweet chocolate pudding

    • lisibit on December 16, 2012

Excellent texture, like a pot de creme. If the chocolate doesn't incorporate completely, blend with an immersion blender or food processor. Sometimes I enjoy adding a touch (1/8 tsp) of cinnamon.

But once made, the desserts themselves often taste like more than the sum of their parts. Goldsmith has eschewed fancy or fussy in favor of delicious, and it's a smart move.

Publishers Text

Fun, craveable desserts—from even-better-than-you-remember-them homemade Pop Tarts and Oreos to brilliant original treats—are the hallmark of pastry chef Hedy Goldsmith. Celebrated in the New York Times and on Food Network for the clever and delicious dishes she creates, Hedy has a sense of humor that comes out in her sweets. Baking Out Loud includes her most sought-after recipes and many more desserts that will inspire home bakers.

Hedy grew up on the kind of supermarket treats that are familiar to Americans—Cracker Jacks, Nutter Butters, coffee cakes from Entenmann’s bakery—as well as concoctions from her Easy-Bake Oven. In Baking Out Loud, she not only details how she transformed her childhood favorites into grown-up versions that are irresistible to kids and adults alike but also shares recipes that boast her signature in-your-face flavors. Twinkies were the inspiration for her Red Velvet Twinks, which combine rich chocolate cake and cream cheese filling that has a touch of tang from the addition of goat cheese. Her Chocolate Caramel Peanut Bars are the most indulgent version of a Snickers bar imaginable. And Hedy finally gives the recipe for her famous Junk in Da Trunk cookies (aka Chocolate Chunk Cookies) and Banana Toffee Panini.

From cookies and bars to pies, cakes, tarts, custards, and all sorts of ice creams, Baking Out Loud is a whimsical collection of eighty inventive recipes that any home baker is going to love to make.
