Notes about Recipes in this book

  • Chopped vegetable salad

    • nicolepellegrini on August 02, 2015

Recipe also calls for avocados in the ingredients, which is not listed here. I thought this was "ok". A lot of work chopping and blanching vegetables, and the dressing lacked real "punch". Not sure it was worth the effort, even using the best local fresh vegetables.

  • Halibut with pepitas, capers, cherry tomatoes, and basil

    • nicolepellegrini on November 11, 2015

Just ok, rather basic. Wanted more tomatoes and less wine in the sauce, also the pumpkin seeds get mushy if you don't eat them right away. Wouldn't bother to make this one again. That's three strike-outs/"mehs" from this book in a row, maybe time to send this one to the recycling pile/used book store...

  • Sweet corn risotto with mushrooms

    • nicolepellegrini on September 08, 2021

A simple but good risotto - first recipe I've really enjoyed from this cookbook!

  • Barbados sweet potatoes

    • nicolepellegrini on August 02, 2015

Wouldn't make again. As much as I normally love sweet potatoes, something just seemed off on the spices and flavor balance here. Too much ginger, too much juice, it didn't finish as expected...just not very good.

  • Grilled guacamole

    • kateiscoooking on February 27, 2017

Loved the guac! Avocados have to be grilled correctly or they'll be bitter. We followed Cat's directions and this was perfect.

  • Grilled Middle Eastern turkey meatballs

    • Cathyschuh on March 16, 2022

Excellent recipe with just spices, red onion, and I used panko 2 cups with 93% ground turkey. I did 20 meatballs baked at 375 for 11-13 min. Will freeze well. Made a sauce with greek yogurt and dill. I did not have fresh parsley so I used fresh dill instead about 3/4 cup. Excellent.

Publishers Text

On the wildly popular show Iron Chef, Cat Cora uses her instincts to transform random ingredients into exciting creations on a moment’s notice. In this book, she turns her eye to some of our most popular dishes to make them faster, fresher, lighter. These are swift meals that Cat relies on when she comes home from work to cook for her own family: Greek-Style Nachos, Grilled Chili-Lime Flank Steak Soft Tacos, Crispy Baked Fish Stix with Mustard Dipping Sauce, Quick Chicken Curry with Peas, and Sour-Cherry-Filled Chocolate Cupcakes.

In dishes like Baked “Fried” Calamari with Marinara Dipping Sauce and Tex-Mex Tuna Casserole, Cat puts a new spin on old favorites. She updates others, tossing chipotle-spiced croutons into a caesar salad, or replacing the usual beef in stroganoff with chicken and adding fresh tarragon. Each recipe illustrates Cat’s motto: just because a dish is a classic doesn’t mean it can’t be improved upon.

“All of us have dishes we cook so often we can practically make them in our sleep. This book shows you how to ‘twist them’ with creativity, imagination, and a fresh approach.”--Cat Cora
