  • Chicken corn chowder

      I would not make this again. I followed the directions as written because I thought I had made it once before and I didn't have any notes written on it. The recipe starts with a roux made with 4 tablespoons of butter, some residual bacon fat, and 1 1/2 cups flour. I can only guess that it should have been 1/2 cup of flour, not 3x that amount. It was a disaster. The Irish Chicken Chowder in the same book is a great alternative, especially with more vegetables and chicken.

      This was delicious. With half and half, it's light but flavorful. We did find the amount of vegetables and chicken inadequate. When we doubled the amount of these ingredients, it looked much more like the photograph! Next time I might keep the amounts of vegetables and chicken as indicated, but cut the liquid in half. As written, this made a lot of chowder for two and we're still enjoying it at the end of the week!

      Good chili; easy preparation. The influence of the beans & tomatoes makes the chili not as spicy as I expected. I substituted beef stew meat for the bison & beef tenderloin.

      Good soup; toasting the chickpeas gives them a lighter flavor. I used one can chickpeas, kept all other ingredients as written.

      Easy recipe; just requires lots of vegetable chopping. Good use of garden fresh zucchini & tomatoes. I doubled the heavy cream, because I wanted more liquid.
