  • Pear and Fontina puffs (Sfogliatine di pere e Fontina)

      Made these as part of my New Year's Eve appetizers. Since I got an uneven number of squares from my puff pastry sheet I decided to fold the squares onto themselves and make little triangels instead of using two squares per pastry and making bigger pastries. Were lovely right out of the oven, but got stale very quickly. Since I did not seal the pastries properly, the cheese oozed out onto the baking sheet which made these a little bit on the sweet side from the pears. However, these are perfect if pressed for time.

  • Apricot cake (Torta di albicocche)

      End result was very good, however there is something off with the recipe. The batter was incredibly dry and stiff (too much flour ?), no way I could fold in the apricots. So I layered the apricots with the batter which worked beautifully. A little bit on the dry side, but still nice with the crunch from the pistachios scattered on top.

      Very nice risotto, without cheese. Used frozen seafood in stead of fresh, probably a billion times better with fresh seafood, but now it was really quick and easy..

      While the frisedda bread might be hard for you to find (as it was for me), a rustic loaf bread or Ciabatta does just fine once toasted.
