  • Heavenly oatmeal bars

      These are so yummy! However, they are incredibly sticky, which may be attributable to some error on my part. Maybe needed more time in the oven, even though I had already exceeded the recommended time by 10 minutes? The corn syrup seemed to end up at the bottom of the bars, hence the stickiness. The chocolate-peanut butter icing is scrumptious, but gets messy at room temperature . I kept the cut bars in the frig which made them easier to handle.

  • Strawberry shortcake with berry sauce

      Loved the shortcakes; they were fluffy & lightly textured. I used the optional dough relaxer which may have helped create that texture. Unfortunately, my strawberries were not the best, & there was not enough time for them to macerate for several hours as the recipe recommends, but the shortcakes & whipped cream more than made up for the berries. The cakes would be tasty for breakfast with butter & jam IMHO.

  • Lemon poppy seed muffins

      Used plain yogurt and increased lemon zest. Butter egg mix curdled but it worked out fine. Baked it in the square ridged bundt cake pan and it was delicious. The edges stayed crisp and crunchy to the next day. Great flavor and texture even if the cake looked like it was overbaked.

  • Banana walnut bread

      This is a very firm-textured, lemony banana bread, loaded with nuts if you choose to use them. My only quibble is that, despite following the directions exactly about pan size & preparation thereof, the batter overflowed the pan & the bread stuck badly everywhere. At least I could use a knife to loosen the sides, but the bottom left quite a large chunk of stuck bread in the pan when I finally got the rest of the loaf out. It's not pretty, but it is tasty. Hopefully the issues can be rectified at some point.
