      5 stars! Absolutely fantastic version of Caldo de res. Doubles the recipe and tripled the veg because that’s how we like it. Mexican partner gave a big thumbs up, as did the 7yo.

  • Pork in red chile sauce (Asado de chile colorado)

      This was good, but I have had better results cutting pork loin into chops browning them, and then cutting the browned chops into cubes before braising. The loin seems to come out more tender this way. Also, as with other recipes I've tried from this book, the yield just isn't right. I ended up with way more chile sauce than the recipe was supposed to yield. Overall, tasty, easy, but nothing incredible.

  • Pan-fried tilapia with mango and avocado salsa (Tilapia con salsa de mango y aguacate)

      Added 1tsp ground cumin to flour mix, try 2 next time. Salsa was a bit of a let down but bear in mind that UK tomatoes are still flavourless at this time of year, my avocados although ok didn't have much flavour and I was out of coriander. Mango although ripe was tasteless. With ingredients at peak flavour this would have been great.
