    I was initially disappointed in this book due to the number of sub-recipes and long, long lists of ingredients contained in it. Now that I have more time, I'm going to try to use it more frequently. I will probably simplify some of the recipes while still trying to keep true to the original intentions of the author.

  • Spicy tomato with chipotle and spinach soup

      This was good. My soup was not vegan as I used a light chicken stock, but otherwise followed the recipe.

  • Fresh burger mix

      These were good and easy to make. I used medium firm tofu and I substituted quinoa for the millet. Cooked in a nonstick pan in a little oil, about 4-5 min per side, the outsides got nice and crispy. Texture inside is a bit soft, so I think I prefer the texture of the chickpea burger from Donal Skehan. The spices were just about right in these and the overall taste was very good. I froze some of these and cooked from frozen, and that worked well. I liked that they didn’t fall apart like many veggie burgers do. Will repeat.

  • Marinated tofu cubes

      This is a very simple recipe for marinated tofu that can be made ahead to be used when you need it. I used medium firm tofu. Used in the book in quite a few recipes such as the mega life salad, several rice bowls, and the Thai noodle recipe. Will repeat.

  • Date almond power shake

      I first had this shake at the Fresh restaurant. Very good, filling, and easy to make. Can substitute almond or regular milk for the soy milk.
