      I followed this recipe with the exception of subbing my own vegetable stock in place of chicken stock, adding chopped kale and cut up Parmesan cheese rind (about 1/3 C), and using much more extra virgin olive oil while cooking and drizzling over the soup before serving. Excellent taste and simple to make.
