    Besides the breadth of information and variety of recipes, this thorough book is unique in that it has recipes for DIY versions of specialized ingredients that are not always available to me, such as curry pastes, hoisin sauce, crispy onion flakes, sesame oil, and substitutes for tamarind or coconut milk, etc (p. 104 - 158). I've gotten an extra copy for friends living in remote locations.
