  • Raspberry soufflé

      This was a bit of a mess. First the recipe specifies 1 cup raspberries be made into 1 cup sauce after cooking down. I only had 1/2 cup after cooking. Then you're supposed to fit all of the whipped egg white mixture into 4 ramekins which were all beyond overflowing. After the specified 15 minutes in the oven the tops were VERY dark and burnt-ish. I will say that they tasted great after peeling off the burnt tops, but I wouldn't make this recipe again without modifying the amount of raspberries, ramekins, and time in the oven.
