Notes about Recipes in this book

  • Rare beef pasta salad

    • nicolepellegrini on July 20, 2025

Definitely nice for a summer evening dish where everything can cool down a bit before serving, and also adaptable based on the ingredients you have on hand (I made with radicchio instead of mixed greens and added some Italian marinated mushrooms.) The dressing was tasty but I still thought it needed a splash more balsamic, especially on the greens, when serving.

  • Spaghetti with crab

    • Baxter850 on May 18, 2025

Simple. Great ingredients make this tasty. Added lemon and crushed red pepper to make it pop.

  • Pork roast braised with sweet wine and oranges

    • nicolepellegrini on December 26, 2025

Terrific! Made this for Christmas dinner and it was quite fancy-tasting for something so simple to throw together. I had some leftover sweet wine that isn't my thing to drink so I was happy to find a recipe to use it up. Loved how the panko breadcrumbs, when tossed with the pan drippings, made a kind of instant stuffing. Also should note that I made it with a 2.5 lb bone-in roast and it was done perfectly in just about 90 minutes after the initial high searing time.

  • Roast prime rib of beef with best little Yorkshire puddings

    • nicolepellegrini on September 14, 2025

This was outstanding! I did prepare a much smaller rib roast - only 3.5 pounds - so I cooked it for just a little over 2 hours and it came out just perfect. Did not make the Yorkshire puddings; next time or if making for a holiday I surely will.
