      Sometimes you find a recipe where you least expect it. After all what is alpine about thinly slice potatoes, fry in butter with a bit of seasoning of your choice, turn, put cheese on top, fry until bottom is well browned? It's the sort of recipe that one assumes most people have discovered on their own ... at least among the rural population where you have to cook based upon what you have on hand. But this is a recipe with a twist -- adding a small amount of heavy cream. It's not enough to give a scalloped potatoes texture but just enough to cut the potential dryness of the new potatoes. I prefer to add a bit of herbal flavor to my potatoes but I will definitely use the heavy cream in the future as a nod to this recipe.

      We loved this and eating this on a winter day made us feel like we were in the Alps. This recipe uses seltzer water so the dish is lighter and not stodgy. If you've never made spaetzle before, then the instructions in the recipe are pretty sparse so I recommend researching online to get the method down.

      Excellent fish entrée; the sauce and Swiss chard complement the fillets well. I doubled the white wine; did not use vermouth.
