      Even though this recipe calls for 4 eggs, the marinade is enough for 6 eggs, if not 7. I had extra eggs on hand, so boiled another 2. If you're only working with 4 eggs, I suggest reducing the marinade by about a third, possibly even half.

      I had no idea what bonito flakes were but the supermarket near me has an aisle dedicated to Japanese products. A quick walk there in the afternoon, and I made my first ever dashi stock for dinner today. So good!

      Great recipe! Loved the aftertaste. Happy to report that this will likely reduce the frequency of my food delivery order. Fairly straightforward to make, and if you plan your time well, it can be on the table in 45 minutes (or 20 if you already have dashi stock ready to go).
