    I used vegetable stock and corn tortillas which made this vegetarian. Very good but not exciting. My choice of salsas wasn't the best. I should have gone with a tamarind-based salsa. But it made me realize that some dry curries would make great tacos with a tamarind chutney.

    Delicious, we had the meat in tacos and ate the soup it was cooked in the next day.

• Charcoal-grilled, chilli marinated pork (Cecina enchilada)

    This is an easy, excellent adobo marinade for the pork or beef. I cheated and completely sliced the meat and restacked it rather than sharpen my knife sufficiently to do the accordian cut - much more even cuts. I chose pork, grilled chiles and onions, pico de gallo , radishes, and lime to accompany the meat. Everyone overate they liked it so much.

• Fresh hibiscus cordial (Agua de jamaica)

    This style of cordial is new to me & I loved it. Will definitely be on high rotation during summer.
