  • Cashew cream

      Very easy to make (you don't need to soak the cashews so long, 15 minutes in boiling hot water is fine). End result is very richa Nd creamy with a strong nutty rather than cheesy taste. I liked it but DD didn't. Mixed with miso the next day to eat with sushi and I really enjoyed that.

      Made with sweet potato for squash as suggested and onion salt for garlic. Left out sriracha for children but would definitely try with it in. I steamed diced sweet potato in microwave for 5 mins which seemed about right. This was a quick and easy recipe - you could pre-make the sauce. DH and I both liked this and I have absolutely no idea why my kiddos didn't like it. Quite creamy and rich - served with greens for contrast.

      Made this with sushi rice for maki - worked a treat. DD1 complained the rice was sticky so job done.

  • Veggie enchiladas

      One day I'll get a recipe right first time. Thought that I had cauliflower but didn't. Used cashew cream instead but the taste was a little overpowering in this context. Used rice instead of cauliflower rice which worked (kind of a burrito enchilada cross) but very dense. M1 didn't like "the sauce". Quite a long process to make even using ready made enchilada sauce. M2 ate the tortilla (with sauce) but not the filling. Would make again as written.
