      This was a good tasting zucchini bread, though it needed more time to get cooked in the middle. (Probably my oven’s fault.) I made the non-dairy version because of current eating restrictions. I also used a mix of AP and whole wheat flour.

      This was pretty good, but very crumbly. Were I to make it again (and I'm not sure I will), I would do half all-purpose and half white-whole-wheat flours. I might even add an egg. The peach was delicious. The cinnamon was maybe 1/2 tsp too much.

      This has become a staple in our household. I add sesame seeds and use cashews and dried cherries and it is perfect.
