  • Zesty peach pie with almond crumble

      I made this pie using my own all butter pie crust, rather than the sweeter, shortbread style crust from the book. I thought the filling was nice, though I would have preferred lemon zest. I subbed cornstarch for the flour since I was working with a more delicate crust and the pie set beautifully. I felt like the crumble needed a touch more sugar (another tablespoon)- but the balance might have been off since I didn’t use the recommended crust. The almonds in the crumble were great with the peaches.

      5 surprising stars! Ok I wasn't paying attention when I was making this dough, and I didn't realize that this crust was more like a sugar or shortbread cookie. I almost panicked after the blind bake! It's an easy way to prepare a pie crust, and the 2 hours chilling in the fridge can be shortened to 30mins in a chest freezer with success. I'm really excited to work my way though this book.

      4.5 stars. This pie is really, really tasty. My strawberries were from a u-pick patch so I didn't need as much sugar, but the jammy consistency that results in the center is sublime. The contrast of the filling with the crunch of the crust that is more like a sugar cookie is very satisfying. Will make again!
