      This is not a good-looking dish, however, it has a surprisingly rich flavour, despite being low in fat, & it was quick & easy to prepare. I substituted wholewheat tagliatelle for wholewheat spaghetti, & semi-skimmed cow's milk for oat milk.

      Apologies for all the changes I made. Used more stock instead of wine and left out onions. Used unsweetened soy milk instead of almond. End result was a reasonable approximation of a vegan carbonara and I might try this again. Girls didn't like mushrooms cooked this way but ate all the pasta. I liked the lemon juice addition but didn't try this on girls. Large saucepan wasn't quite big enough for this and it clumped together quite a lot despite frequent stirring.

      This was a useful recipe to use up some red cabbage & odds & ends of slightly differently-flavoured mayonnaise which family members had bought. Sacrilegiously, I substituted non-vegan mayonnaise for the vegan mayonnaise specified.
