pg 135 PUY LENTIL AND CORIANDER PESTO BAKE WITH SWEET POTATO MASH. Made 9/4/20 My husband made these for me during lockdown - after I had made many recipes out this book during this time. It was a decent recipe.

pg 133 QUINOA,BUTTERBEAN AND BUTTERNUT SQUASH BURGER. Made 19/4/20 Another lockdown meal that i made. This was very nice indeed. Will definitely make these burgers again.

pg 125 SRI LANKAN VEG CURRY Made 29/3/20 - A lockdown meal - Really enjoyed this.

pg 118 PUY LENTIL COCONUT DAHL Made Sept 2021 - I used an onion (not leek season) I also used tinned cherry tomatos as could not find fresh ones. I added a capsicum as it needed using and spinach from my garden. I did not used the amount of salt stated in the recipe (2 and a half tsp would have been way too much given the amount of tamari used) The result was a filling, rich and unami tasting meal.

pg 56 -CHUNKY MORROCAN HARIRA SOUP. Made 26/3/20 This was very nice and easy to make. The recipe made enough to give us left overs which we had 2 days later for lunch.

Notes about Recipes in this book

  • Thai coconut, sweet potato and lemongrass soup

    • sarahj22 on July 19, 2017

This soup is beautiful but it helps to be in the mood for some veg chopping! End result is very thick but you can thin it down with stock or water. Gorgeous Thai flavours, rich and filling.

  • Hearty Italian veg and white bean soup

    • Hellyloves2cook on August 25, 2016

This recipe calls for 2 Tbsp of liquid aminos/soy sauce and 2 1/2tsps salt which I thought was a little excessive so I cut down the salt to I level teaspoon. For my palate that was plenty so I am glad I made this decision. The soup was flavoursome and even better the following day.

  • Peanut and chilli dressing

    • lean1 on November 30, 2025

way too much oil in this dressing. Used 2 tbsp. and omitted the chili. Excellent. Didn't use the amount of water suggested would have been too thin. Great for pasta or salad.

  • Mexican leek and black bean chilli

    • SugarFree_Vegan on July 19, 2017

I would have never thought of adding leeks to a chilli but this works so well, a really tasty and very low calorie chilli if you are careful with the oil.

  • Banana and walnut cake

    • Pandan on February 17, 2024

Made this with dried sour cherries instead of raisins and only half of the honey. I reduced the baking time drastically to only about 35 minutes.

  • Shel's no-bake caramel slices

    • Booksandchocolate on April 10, 2021

Very good! I didn't have almond butter, but I had cashews at home that I used to make my own cashew butter (roast cashews until they start turning golden, about 10 minutes, and then put them in the food processor while still warm). It worked perfectly in the cake. The cake freezes really well. Took out a few pieces the other day, and they tasted exactly the same as the day I made it.

  • Honey and seed flapjacks

    • Hellyloves2cook on August 25, 2016

I used honey in this recipe. Very easy recipe and turned out well. They didn't last long in the tin with my teenage boys.

Publishers Text

"I love The Happy Pear. Its cheery optimism is enough to make it a charming refuge ...genuinely good food that brings healthy eating in from the cold". (Irish Times). Let's face it: while we want to eat more fruit and veg and things we know are good for us, we sometimes fall short because we're not sure how to turn all that great produce into great food. Well, welcome to the Happy Pear way of eating - healthy but never worthy, easy but never dull, and packed with mind-blowing flavour, exciting texture and vibrant colour. The Happy Pear opened ten years ago when twins David and Stephen Flynn, passionate about starting a food revolution in their home town, took over their local fruit and veg shop and later opened a cafe. Their revolution has not only succeeded, but it is spreading, and The Happy Pear's fans range from young parents to pensioners, ladies-who-lunch to teens-on-the-run, Electric Picnickers to Hollywood stars. David and Stephen's first cookbook is full of irresistible recipes for everything from everyday breakfasts, lunches and dinners, to scrumptious - and yes, still wholesome! - cakes and sweet treats, to special occasion splurges. David and Stephen also tell their story (how they transformed from jocks to hippies before finally finding their groove), share their top tips for maximizing taste and goodness in food, and explain how they've succeeded in building a food business based on flavour, health and community. "One of the funkiest eateries in the country". (Irish Independent).
