  • Baked egg breakfast sandwiches

      I’m making a lot of freezer friendly items right now so that we have quick reheat options for when the baby arrives, which was why this was the first recipe I had to try from this book! The sandwiches turned out great - I did ham for our first round and they heated up perfectly in 2 mins from frozen. The recipe does make extra egg, I trimmed to fit the English muffins for easy packaging.

      This was really tasty and would be perfect for a big group brunch. It did not invert pretty onto a plate. In fact, the cheese bits at the bottom of the pan stick stubbornly in spite of greasing generously beforehand. Not that it affected the taste at all. We served this with a bourbon infused maple syrup.

      Do not fill until you are going to eat them. Marshmallow fluff becomes slack within a few hours.

      This was too soupy. Hard to scoop with chips - decent flavor but do not think I would make again.

      This smelled amazing while cooking, but lacked flavor. Disappointing. The sauce needed to be thicker and cover the chicken better.
