      I halved this… I probably should have downsized the pan, too. I wish this was more flavorful, but that may be because I didn’t use the pancetta / bacon drippings. I’d likely try the Tasting Paris version if I make this again.

      I judged this cookbook and myself for buying it, but this recipe stood out to me and I wanted to try it. I made this with a couple amendments. I didn’t have peas, but they would be great here. I added some tamarind date chutney, labneh, and sliced jalapeños. The green chutney wasn’t great on its own but did balance the flavors. Also, I skipped the wonton and used fried onions for some crunch and flavor. The quantity wasn’t enough for a vitamix so it needed an immersion blender. Great flavors and it came together relatively fast. Will happily make again.
