  • Spicy sausage traybake with apple & parsnip

      I made a couple of changes- I had no fresh sage or fresh chilli and no parsnips. I subbed in some diced sweet potato and added some dried sage and a tsp of old bay seasoning. It needed just under 45 mins - 20 mins at 180 then I turned it up to 190 for the last bit as I was cooking something else at the same time. It might have benefited from 190 for the whole time as nothing was very coloured but it was really tasty and I'd definitely make again, with or without substitutions.

      Nice Reckon it'd make some nice pull apart rolls too. I might try adding a bit more olive & sun dried tomatoes next time.,. perhaps as a topping.
