      Due to a banana allergy substitute the banana for 500g grated zucchini and added one extra egg. The cake came out delicious and moist.

      Absolutely delicious! I brought these to a dinner party and they were a hit. The recipe was easy to follow for both the shortbread and the filling. One tip, when I took the shortbread out of the oven I lightly poked it all over with a fork (not through to the bottom) this helps the filling “stick” and set with the shortbread. I will be making these on repeat!

      We really enjoyed these! I chose to make 12 large muffins instead of 15 regular because I was lazy. They were done baking at 20 minutes. I'm at high altitude and the only change I made was I reduced the baking powder to 2 tsp. I will make again!

      These were delightful, and very lemony, just as we’d hoped. The batter was quite stiff before adding the whipped whites at the end, so I worried that it would be difficult to mix them in, and possibly wind up over mixing and making the muffins tough, but the texture wound up being very light. We loved these.
