    This is the perfect cake for citrus season. I could have eaten the blood orange curd whipped cream by the spoon, it is so delicious. Made half a recipe in my 16cm angel tin, perfect treat for afternoon coffee.

• Super-simple New Year’s Day chocolate cake

    Quickest chocolate cake ever, only one bowl needed. Used an 8 inch cake pan instead of the recommended 9 inch pan, increased baking time by 10 minutes. The frosting is delicious with a nice tang from the ceam cheese, however bringing the melted chocolate to the same temperature as the rest of the frosting takes much longer that 10 minutes.

• Chocolate-espresso pudding cake

    This was lovely, with intense chocolate and coffee flavor. I cut the recipe in half, and used a proportionally smaller baking dish. Instead of baking for 40 minutes, I checked it at 32, and it was probably even a bit more done than it should have been (no jiggle). The ingredients list called for strong coffee or espresso, but the instructions never said when to add it to the mixture, so I added it at the same time as the egg yolks, before the flour and whipped whites. It was delightful served warm with a bit of vanilla gelato.

    Wonderful cake, just delicious. Only changes I made were omitting the almond extract and almonds (I love them, but my wife doesn’t), and instead adding some vanilla. Mine took a little over an hour to fully bake. Results were excellent, with great flavor and texture. We’ll definitely have this one again.

    Nice & moist. I should have added more lime zest but had one lime when I needed 2. Good for breakfast or a snack. I liked it but didn’t love it- maybe it’s because I used less zest?

    The whole family loved this cake, did not have any sliced almonds so made without. A definite repeat!

    Very good cake. Next time I would simmer the mint in milk instead of chopping finely and adding to cream because the mint turns dark after chopping.

• Granny Pete’s chocolate cake with marshmallow frosting

    Delicious combination of chocolate and marshmallow. With the amount of espresso used in the cake batter and the cake-soaking espresso syrup, I was surprised I didn't detect more coffee flavor in the finished product. The marshmallow frosting is quite the star in this recipe.

• Mega vanilla cream-filled market cake

    While the final cake tasted and looked delicious, I had some issues with this recipe. When I added the water, sour cream and lemon juice mixture to the batter everythinhg curdled and turned into a liquid mess. Then, despite adding the marshmallow cream very carefully making sure that it was perfectly covered, the cream rose to the top of the pan during baking resulting in a big marshmallow dome on top (or actually on the bottom) of the bundt cake, which I had to cut off the cake before inverting the bundt pan. While you did not notice those mishaps on the final cake and it still tasted good, there was of course way less marshmallow cream filling (which tasted delicious btw) than I had hoped for.
