      Tasty, but my family liked our usual recipe for baked oatmeal better, so probably won't repeat. Our other recipe includes coconut oil or butter in the batter. This one doesn't, and it stuck to the pan pretty badly. I liked the addition of pecans.

      I had high hopes for this recipe, but I think baked oatmeal is just not for me. This was better than the other recipe I tried, but still, I like regular cooked oatmeal much better. I made a half recipe in a 6” pan, overnight version, and added optional raisins (both nuts and dried fruit are optional in this recipe). My smaller pan was fully cooked at 45 min convection.

      Very tasty! I used roasted pumpkin seeds and skipped the coconut water (used regular water). Will be making this again! The cheery pink color was fun to drink.

      This has a really great flavor-- creamy with a background of spicy ginger and turmeric. I love that this a way to get more healthy spices into my diet, but I'm not sure what to do with it other than drink it. I'm going to try adding it to smoothies.
