  • Beef dumplings in hot and sour broth

      The broth & seasonings in this were good, but this recipe was so riddled with errors that I’m worried that this book has been poorly edited throughout. The recipe claims this makes 24-30 dumplings, but I found that it made 72. I had to make 2 batches of dumpling wrapper dough to make them all. The recipe asks to “place 1 large tsp” of filling in each dumpling wrapper, but I found that I needed to add a large tbsp. The recipe also asks us to use 1 tbsp of sesame seeds in each bowl, but I found this too be a huge amount that looked nothing like the photo. I believe the correct amount is 1 tsp.

      This was quite tasty, with a lovely complex flavor and beautifully soft and gelatinous meat. The sauce didn't thicken during the 2 and a bit hours on the stove, so I took the lid off and reduced it over high heat until it was thick and glossy. I served with rice and roasted broccoli. There ended up being a lot of fat on top, so next time I'll probably make it ahead of time so I can cool it and scoop the fat off the top.

      I like the idea, but not all the ingredients will properly cook this way. So, instead of adding raw garlic to the noodles, I’d sauté them first to get a more even cook.
