      Excellent potato casserole; good "comfort food" for a cold winter day. I substituted a mix of Gruyere & Emmental cheese, because Reblochon is not available here. Also reduced the cream by 50%.

      Delicious egg, bacon, and potatoes -- good for either breakfast or dinner. I cooked the onions & potatoes in the bacon fat, so did not use oil. (This also simplified clean-up.)

      Good salmon, poaching it in a vegetable-herb broth gives a light flavor. I used prepared mayonnaise, to which I added fresh parsley & tarragon.
