  • Lemony celery slaw

      I'm keen on celery as I have heard that it helps manage blood sugar; I have absolutely no idea if that is true but it makes a nice healthy reason for using celery without insisting it be a superfood. So, a simple slaw made from celery was the obvious choice to try from this cookbook. I found myself wishing that my celery had had a few more leaves as the textural difference between stalks and leaves was a definite plus. I paired this with smoked oysters but a wide variety of tinned fish would have worked equally well.

      Too much fennel and yet still bland. The breadcrumbs were a delicious addition.
