Notes about Recipes in this book

  • Classic meat sauce & ricotta lasgana

    • Jviney on December 06, 2019

A great, classic lasagna. I made it for a dinner party and it was perfect - the squares came out perfectly and everyone loved it.

  • Creamy mushroom lasagna

    • Jviney on December 14, 2021

This lasagna was made with kind of sketchy grocery store “gourmet” mushrooms and thrown together in not much time but was so delicious. My picky seven- and five-year-olds loved it, my husband and I loved it. Another winner.

  • Speedy skillet ravioli lasagna

    • Jviney on July 21, 2020

Big bang for your buck here. I was able to throw this together at 4:15pm with two crabby pre-schoolers underfoot, and everybody loved it! A win!

  • Spinach artichoke dip lasagna

    • Jviney on December 06, 2019

Outstanding. I had my doubts when I was making it - the sauce seemed too runny, as I was using oven-ready GF green lentil lasagna noodles and so did not have leftover pasta water. It was really delicious and unfortunately I have no leftovers to enjoy.

  • Sausage-fennel lasagna rolls

    • Jviney on February 27, 2023

I was a little bit intimidated by this recipe but each step was approachable and everyone loved it. I forgot to warm the bechamel, having made it the day before, and I think it was a little bit too thick to bubble nicely. Otherwise, great dish.

    • Pamsy on May 04, 2024

We really enjoyed this. Used gluten-free Paccheri and fennel seeds instead of fennel bulb. Lemon zest is a nice touch. Definitely worth repeating.

  • Cheese skillet baked spaghetti

    • Jviney on April 05, 2020

As with several recipes in this book, I had my doubts while I was cooking this. Doubled the ground beef for three hungry men in my family, and it barely fit in my 12” cast iron skillet, but my husband had three bowls and said it was a top 5 meal for him. Very very good.

    • DFarnham on February 26, 2023

Used my 14" cast iron and this barely fit. Had closer to 3/4 of a pound of hot italian sausage. Great recipe. Super simple, especially if you're going to feed a crowd. Best right out of the oven; leftovers are good, just a little drier. Will repeat.

  • Rotisserie chicken Tetrazzini

    • Jviney on December 24, 2019

Rave reviews from my family on Christmas Eve. I forgot to add the half cup pasta water and the finished dish was quite thick, but everybody said they wouldn’t change a thing. Another delicious recipe from this cookbook.

  • Roasted poblano pepper-stuffed shells

    • Jviney on March 12, 2020

Excellent. Loved the subtle taste of the poblanos, and the recipe made enough to feed three of us plus freeze at least that much again. Very good.

  • Italian restaurant iceberg lettuce salad

    • Jviney on December 06, 2019

Excellent. I wouldn’t change a thing. Great mix of Italian flavors, easy to throw together. Great side for a lasagna dinner.

    • Rubyclaire29 on January 15, 2026

This is my go to Italian dressing recipe and I also agree, it is perfect! You can play and add dried basil and lemon zest but it’s very good and I always get lots of compliments!

  • Why knot garlic knots

    • Jviney on December 24, 2019

Served as an appetizer before rotisserie chicken tetrazzini - they went fast and everyone loved them.

  • Ragu Bolognese

    • Jviney on July 03, 2020

Such flavor to this ragu. It was my first time making a ragu bolognese, and I was surprised to see the simmer and reduction times to be so short. I doubled it, and perhaps that extended the times, but this was a good five hour bubbler on the stove. Looking forward to taking it out of the freezer in a couple of weeks.
