      Easier than I expected and super impressive for a dinner party. Also extremely delicious! But like most recipes in this book it's so many ingredients, and acquiring king oyster mushrooms isn't easy (I used them and shiitake from M&S mixed punnet).

      There's a fair bit of effort here but it's probably the best seitan recipe I've ever made! A reuben sandwich made with this is absolutely delicious. It freezes well too, so my time investment kept me stocked up for a while.
