    I made the zucchini and watercress soup and it was as easy to make as it was delicious. The only change I made was using dandelion greens instead of watercress since I couldn’t find any watercress. So, the soup became zucchini and dandelion greens. The caramelized yellow onions add a lot of subtle flavor to the other vegetables.
