      Good, but not amazing. I think I'm not a fan of berbere though or the premade blend I used. Also used fresh ginger instead of ground, that's what I had. Tried over potatoes because I have a no potato person in the house. Though it was better without potato. Might be very good with a sweet potato though.

      With Zucchini and Carrots instead of Butternut Squash. Tasty. I will make it again. Also with potatoes.

      I thought this was too simple to be really tasty but it came out way better than expected and I will certainly make again. Not sure I'd call this a gumbo, no roux and not thick like one, but it is a fantastic stew. These are my adaptations: Fresh okra not frozen (I only had about 4 from the garden), fresh tomatoes not canned (it's summer after all), Rancho Gordo black-eyed peas that I cooked from dried instead of canned black beans. Garden fresh peppers and onions, not frozen (again it's summer!). I don't remember if it called for added salt but my Cajun seasoning (Slap Yo Mama) had enough salt for me already so I didn't add any additional.
