Notes about Recipes in this book

  • Cornish saffron cake

    • Lepa on May 26, 2025

This is a delicately spiced, enriched bread with bits of citrus peel and currants. The recipe makes two small loaves that are delicious sliced and toasted with thick lashings of butter. Mine took an extra five minutes to bake.

  • Ginger fairings

    • pomona on November 18, 2024

So good. The best. Better than ginger nuts.

  • Brown butter sponge cake

    • pomona on November 18, 2024

Lovely flavour. I baked it a little too long (total 22 minutes) and so the edges were dry but it was tasty.

  • Spelt and orange loaf cake

    • Lepa on January 09, 2025

This was so rich and delicious! The flavor was simple but the cake was so buttery and satisfying.

    • Lepa on May 26, 2025

This has become one of my favorite loaf cakes. I buy bags of spelt flour just to bake it. I am not sure why, but this simple cake is so delicious. Agree with another poster that the authors write great recipes.

  • Pistachio and cardamom cake

    • Lepa on March 11, 2025

This so really delicious and even better the second day..next time I might use orange juice instead of lemon for the icing, as the lemon was a bit jarring. My cake needed a full 60 minutes since the temperature is so low.

  • Tiramisu from scratch

    • ebawden on February 01, 2025

I have been making mascarpone for five years or so, for the purpose of tiramisu. This version uses a higher fat cream than I am used to. It split when I whisked it in. Lesson for next time: add the mascarpone slowly to the egg yolk/sugar mixture to avoid this happening.

  • Burnt orange Basque cheesecake

    • pomona on November 18, 2024

I used my last bergamot orange for this and it was worth it! I made a half amount in a 20cm tin, using three very large eggs. Perfection. Delicious. These guys know how to write recipes.
