carne asada (152) - marinated bavette steak in citrus/chilli with refried beans and salsa - disappeared, really tasty and easy to make once marinated. Will definitely be made again!

salsa de tomates y pimiento rojo asado (209) - charred tomato and red pepper salsa - roasted, blackened tomato, pepper and garlic blitzed and mixed with red onion coriander and dressing - deeelicious. Had with carne asada - super - yum

enchiladas verdes rellenas con frijoles cannellini (70) - I loved this. the filling is reminiscent of italian bean stews, the salsa verde is super tasty, very liquidy but then gets soaked up by the fried tortillas - loved it; might use less chicken stock in the salsa next time but flavours amazinG!

One pan courgette and corn with crema (54) - declisious and substantial vegeterian meal - v simple, but recipe for 2 made enough for 4! and changed the balance of corn vs courgette - needed more courgette. great lunch ++

Barbacoa Tres Chiles (147) - slow cooked chuck steak marinaded in 3 chille and spices; cooked for hours then shredded and eaten with tacos, tomatoillo/avocado salsa and sour cream - oh, this is soooooo good! Cooked for longer than indicated - around 3 1/2 hours so meltingly soft. Even better the next day. The recipe is very generous and could feed 10. i used less orange juice and water than the recipe indicated (missed out the extra later addition in recipe) and was still very moist. Will be making for another occasion for sure.

It's a real taste of Mexico, with a modern twist.
