      Easy recipe - I didn't let the dough sit overnight, and the cookiess still taste great, so I'm excited to try this again when I can let them refrigerate overnight! I made these in the same batch as the Blueberry and lemon cookies.

      I added slivered almonds and they were delicious! I refrigerate the dough (and somehow completely forgot the vanilla ??) but they were still delicious - I cant imagine how good they'd be when I follow the recipe! I made these in the same batch as the Pistachio, white chocolate, and sour cherrry cookies.

  • The peanut butter cookie that almost wasn't

      I used crunchy natural peanut butter and baked mine using convection and with an extra sprinkle of Maldon. I was able to get 19 cookies using a red (size 24) disher. Disregard baking for 18 minutes or your cookies will likely burn. I took my first batch out at 15 minutes and they quickly crisped up and were not cragy in appearance. The second batch I took out at 10 minutes because I want something a bit softer, which I prefer. That was the way to do it. They held their shape and taste very peanuty.

      Fab recipe takes just ten minutes to make before they’re in the oven. Cooked for 14 minutes to get the chewy texture, came out perfect. Go to Anzac recipe for sure!

      Delicious biscuits - nice and buttery whilst also having a great texture. I used cassia instead of cardamom - the spice flavour it quite strong, so you could even not have the spices if you want more of a classic biscuit. It certainly does require some arm strength to initially pipe the shapes, I could only manage straight lines (which I sandwiched with jam for some) rather than the S shape

      These were pretty good, but didn't look much like the photo. My cookies spread a lot more and were super soft. The dough was incredibly sticky after adding the apples. No weight given so maybe my apples were much larger. The crumble part made probably double what I could fit on top of my cookies.

      I used store bought passion fruit curd. And combined the chopped macadamia nuts with the dough instead of rolling it on. Delicious.

      Tasty, but had to increase the butter to 175g in order for the dough to come together enough to roll out. Was too crumbly before the addition.

      Cookies spread a lot more than I thought! So it ended up being very much like normal Anzac biscuits. I think it was potentially because my dough was quite buttery. The biscuits were nice anyway.
