Notes about this book

  • sarahj22 on June 24, 2024

Lots of healthy recipes that look delicious and don't involve lots of obscure ingredients. Great ideas for breakfasts, lunches, dinners, snacks and sweets. Two of the cook's recipes I've tried (the Breakfast Banana Bread Loaf and Sausage, Spinach and Tomato Pittas with avocado dip, the latter not in her book but on her Instagram) have been lovely. I borrowed this book from the library but on the strength of the recipes I'll definitely be purchasing a copy.

Notes about Recipes in this book

  • Blueberry crumble breakfast oat bars

    • sarahj22 on November 21, 2024

As soon as I spot something healthy and cake-like for breakfast I'm sold. I made a total mess of these when I tried to lift the cooked item out of the air fryer using the baking paper it was cooking on - the paper ripped and it all fell apart. But they're still very tasty. I made some changes - tahini instead of peanut butter, added strawberries in addition to blueberries, cut back on the honey even though my banana wasn't quite ripe enough - so they weren't too sweet, but in future I'll follow the recipe more closely. Although I enjoyed these, the breakfast banana bread from the same book is still my favourite breakfast cake, so I probably won't make these as often as I do that one.

  • Chocolate orange oats with citrus honey

    • stacy_gygujy on May 11, 2026

      I think 1 T cinnamon was too much - maybe should be 1 t?

  • Breakfast banana bread loaf

    • sarahj22 on November 15, 2024

Wonderful - easy and tasty. I make this nearly every week. A lovely option for breakfast or a snack when you want something sweet and filling but healthy (my current favourite is to serve it alongside blueberries and a banana). I don't bother grinding the oats and often omit the walnuts and pumpkin seeds as my daughter isn't a fan of them. I don't bother adding the final banana on top - it gets slimy fairly quickly, but without it the cake keeps beautifully for days.

    • Happykikkers on November 24, 2024

Tastes ‘healthy’. But maybe we’re just used to much sweeter banana breads? I didn’t add the banana on top (not enough bananas) but maybe I should have as the bread was quite dry without it. I thought it was ok but my husband didn’t like it at all.

    • stacy_gygujy on May 19, 2026

Recipe was a bit confusing - I think you need to process the oats first in a blender. I blitzed them for a second. Not sure how it would have worked out otherwise.

  • Morning tacos

    • stacy_gygujy on May 29, 2026

Loved the addition of basil to the guacamole. Only used one cherry tomato

  • Prepable breakfast muffins

    • Happykikkers on October 15, 2024

These are nice and easy. I didn’t have the smoked cheese but can imagine this really ups the flavour.

    • stacy_gygujy on May 31, 2026

These taste great - I cooked the eggs in the convection oven at 400 for about 15 minutes

  • Tuna melt

    • Idril on November 21, 2025

Not the best of her sandwiches - go for the sausage ones or her cottage cheese tuna melt from social media over this. It’s fine but I’ve just had much better tuna melts.

    • stacy_gygujy on May 20, 2026

      Yum!

  • Crunchy peanut slaw

    • stacy_gygujy on May 31, 2026

Made for today’s lunch and prep for the start of the work week

  • Nature's multivitamin

    • irene_95ggqd on May 09, 2026

Chickpeas can be a bit much, reduce them and add some tinned tuna. Added avocado to this too and loved it.

  • Lighter pesto pasta salad

    • Happykikkers on April 24, 2025

Delicious and super easy. I made a big batch for Easter brunch with family and they liked it! Used smoked chicken filet as protein, lactose free Greek yoghurt and fresh garlic instead of paste.

  • The 'I have no time' tuna salad

    • stacy_gygujy on May 15, 2026

Made in the morning for a work lunch - it kept well. Skipped the tomatoes.

  • Butternut squash mac and cheese

    • stacy_gygujy on May 12, 2026

Made with lentil penne. The squash can take awhile to roast depending on the size.

  • Prawn and Sriracha burgers

  • Pesto prawn courgetti linguine

    • carly_ztnb88 on March 26, 2026

Very quick and easy to prepare, a tasty late night supper. Plenty of lemon juice, chilli and black pepper boosts the flavour.

  • My best ever chicken and tarragon lasagne

    • stacy_gygujy on June 01, 2026

It felt like a lot of work partly because I had to cook and shred the chicken.

  • Garlic-crumbed salmon with courgettes and yogurt

  • Chicken and greens pot pie

  • 'Ratatouille' orzo with sea bass

    • Idril on November 18, 2025

Made with salmon which works perfectly well. I added an extra courgette, doubled the dressing (besides the lemon to avoid being over acidic) and roasted the tomatoes and onion with the other veg to simplify things on a weeknight and because it’s winter and I didn’t feel like having salad vibes. It was delicious, but I acknowledge I didn’t make it 100% the same. A good base - play around with the fish and the veggie quantity/cook and it is likely to work regardless.

  • Sticky peanut stir fry

    • Idril on November 19, 2025

Not the best from this book, I had to cook the veg a few mins more because the broccoli was still very raw even at high heat if following her timings - not sure this recipe has been tested properly. The sauce was quite nice but needed extra punch. I’ve made much better SE Asian inspired stir fries with no extra effort.

    • stacy_gygujy on May 31, 2026

      Made with beef - good

  • One-pan Tuscan salmon

    • RCL on March 12, 2026

Really enjoyed this. Used bold beans big jar so doubled garlic, shallot and paprika. Added lemon juice along with zest and omitted Parmesan. Used yellow and red santini tomatoes. Boyf liked it too. Very filling and a huge portion with the bold beans big jar beans. Probably didn’t add enough basil and would add more next time.

    • megan_cw348y on March 25, 2026

Very filling, really liked the butter bean and tomatoes. I would use a more interesting spice mix on the salmon next time

  • Meatball and ricotta al forno

    • stacy_gygujy on May 18, 2026

So tasty and filling. I served it with some baby arugula on the side.

  • Superfood vegetarian Bolognese

    • carly_ztnb88 on March 25, 2026

A lot of chopping involved in this one but otherwise it’s very easy and tastes really good. One of those recipes that’s greater than the sum of its parts, tasted really sophisticated

  • Chicken katsu curry

    • Happykikkers on October 12, 2024

3.5* We liked it but it didn’t blow us away. The chicken didn’t really turn golden brown (might have been my oil, used Pam spray) so I turned up the oven for the last 5 minutes. It was an easy meal with no complicated ingredients and I could see myself whipping this up on a weekday night when I’m craving chicken katsu but lighter.

    • carly_ztnb88 on March 25, 2026

A lot of steps and a lot of dishes like any other katsu recipe. I particularly liked the sauce and the fact the chicken was oven baked instead of fried. The cucumber pickle was a nice addition too. Would cook again.

  • Thai chicken and butternut soup

    • sarahj22 on November 07, 2024

I had half a butternut squash to use up and this was perfect for it. Quick enough to throw together when my three-year-old was having a snack and really tasty. I liked that there's no onion as it saved on chopping time, also the fact she doesn't mention peeling the squash (I never bother). I used crushed jarred garlic and ginger and omitted the red chilli and cooked chicken. Because of the relatively small amount of squash (500g) it's a fair bit thinner than many similar soups. Delicious.

  • Spiced turkey koftas with tabbouleh and mint yogurt

    • carly_ztnb88 on March 27, 2026

This was ok, didn’t like the quinoa in the tabbouleh so would substitute with bulgur wheat in future. The koftas were light with lovely flavour, and held together well.

  • Harissa roasted red pepper immunity soup

    • stacy_gygujy on May 22, 2026

I didn’t have enough roasted red peppers so I puréed almost two small jars of sun-dried tomatoes and added those. No parm so I used a Mex cheese blend. Great store cupboard soup!
