  • Spicy bean smash burgers

      The bean patty itself was quite bland. You really need to add a ton of salt, and I'd add double the amount of gochujang shallots too, or even more. The kimchi and the layered cheese was nice. I just think it would be better as a beef burger. Or maybe could try a mix of beef and beans.

  • Smoky pork shoulder tacos

      I took a few liberties with this recipe, but it turned out really well: 1. I only marinated the pork for about 3 hours. Then I seared the pork, added it and the marinade and a tin of chopped tomatoes to the slow cooker, and cooked on high for 3-4 hours 2. I removed the pork and shredded it, boiled down the marinating/tomato liquid, seived it, and mixed some of it (but not too much) in with the pork to serve. Also I didn't have chipotle chillis, I used two large dry pasillo chillis instead, deseeded. This was a really good pork taco recipe, just the right balance of sweet and spicy. Will definitely repeat.

  • Chickpeas with chorizo and herbs

      I loved this dish, and would make again. It did have rather a lot of red peppers in it, maybe the ratio was a bit off because I left out the olives. Possibly add some spinach or something to balance out the flavours and textures a bit more.

  • Filo rolls with aubergine, pepper and onion (Patlıcanlı rulo börek)

      Considering there is barely any seasoning here, these packed a lot more flavour than I could have imagined. They're basically like ratatouille (without the aubergine) in filo, and the oily richness of the vegetables really creates a lovely flavour and contrast with the crispy filo. I added some feta to these, and would probably do the same again, but they'd still be nice without.

  • Sausage, courgette and watercress pesto pasta

      Really tasty pasta recipe, quite different and a really nice change. I'd just say to roughly chop the almonds before putting them in the processor, as mine didn't appreciate the whole ones much.
