      This is a terrific potato salad. To be clear, it's not a mayonnaise salad, which my husband considers a plus. We took this to a pig roast, and it was very well received.

      These are homemade potato chips, baked in the oven. I use 2 medium/large russets on one sheet pan. A mandolin makes things easier. They are a bit fussy, as you have to wash and dry them, but boy, are they good. You do need to serve them hot from the oven. Great with grilled burgers.

      This is (another) terrific recipe from this book. Requires planning ahead because it bakes for an hour, but cooking the cubes in water with butter results in tender little potato puffs inside, with a crispy exterior. I have reduced the butter with success. Delicious!

  • Potato gratin with onions and beer

      This is soooo delicious. It gets made in our house at least once or twice a year, generally for a holiday or other special occasion since it's a bit time-consuming. A lot easier with a mandoline or V-slicer though.
