  • Tiny tres leches cake

      Very nice little cake, and appropriately sized for a 3-person household (unlike most tres leches cake recipes I've seen, which make at least twice as much). It seemed like there was no way it could absorb all the liquid at the end, but it did. It held up well for about 48 hours after making it, but started getting soggy after that.

      This is perfect size cake for two people and just big enough to share with the couple across the street. It isn't quite as fabulous as my mom's old recipe for German Raw Apple Cake but it is close and quick and easy to throw together. This cake is best eaten the day it is baked, preferably while still warm.

      Delicious, moist cake. I had it for dessert with some armagnac, and it was very nice. It would also be great with coffee. Mine fell in the middle; if I make it again, I'll try making high-altitude adjustments. (I live at 5,000 ft.)

      I made this to take to friends who are in their 90s and stuck in lockdown at a retirement center. I handed it to them (all of us masked) at the front door and later received glowing reports about how this was one of the best cakes ever. The 6 inch size was perfect for them to enjoy without being overwhelmed with too much cake and they had enough to share a few pieces with friends. It took the full 35 minutes to bake.

      This is a good basic chocolate cake recipe that makes a cute 6" layer cake. I brushed each layer with about a tablespoon of St George Coffee Liqueur before frosting it with the Chocolate Cream Cheese Frosting from this cookbook. I added Espresso powder to the frosting and the combined flavors were very good.

      This cake is incredibly moist, almost too wet even though I weighed all the ingredients and drained the pineapple really well. It took an extra 8 minutes beyond the 35 minutes called for to bake to the proper doneness. I think I would try baking it at 350F next time and see if the results are better. The flavor is great.

      This is a rich luscious frosting that you can eat spoonfuls of. I added about a tablespoon of instant espresso powder to the confectioners sugar when making. The result was fabulous. My only problem was that the frosting set up very fast after I added the cooled melted chocolate chips and it was a challenge to get my cake frosted. Next time I might use the melted chocolate while still a bit warm make the frosting easier to work with.
