      Avoid. Food52 IP polenta works well. For some reason (4oz less liquid? Bringing liquid to simmer first? Don’t know. ) I got burn notices with this. Twice. In two separate pots. Avoid.

      Made this with large rigatoni (#24), and some browned italian sausage meat using the jarred sauce variation (putanesca). Turned out really nice, but I might add another jar of sauce at the end after pressure release (and either simmer a bit, or when reheating) since it absorbed most of the liquid, and I like it more saucy for leftovers

      The soup was a little too thin from the 4 cups of broth. Easily fixed by simmering the soup on sauté for a few minutes. Next time I will use 2 cups of broth and add more as necessary to adjust the texture once the soup has been pureed.

      This was tasty. Make sure to have the fresh herbs. I used two cloves of garlic in the dressing.

      These bowls were very good. I didn't have tomato or avocado, and they would have added a little more flavor and texture. Instead of sour cream, we used sheep's milk yogurt and instead of cheddar, we used Manchego. I used two canning jar twist tops stacked to hold the bowl holding the rice above the beans. I may cook lamb chorizo and add the leftovers with some canned tomatoes.

      Good flavor, easy recipe. I served it with chicken cutlets and pan fried gyoza. I think you could even double the eggplant if you so desired.

      Have made this multiple times and it is easy and tasty. I add sauteed shrimp seasoned with TJ's Citrusy Garlic Seasoning (great on scallops and croutons, too). Easy enough for a weeknight dinner and good enough for company, too.

  • Lamb and zucchini meatballs with cucumber-yogurt sauce

      This is really lovely - however instead of using the instant pot, I put the meatballs on a baking tray, coat in oil and bake at around 200 for 20 minutes (depending on how big I'm making them). Usually serve mixed with a jar of tomato sauce (eg Barilla's Arrabiata) and spaghetti. Delicious recipe, the ingredients go together so well.

      Needed to use an extra cup of liquid (beef stock). DON'T USE BAKING SODA WHEN BROWNING BEEF. Not a keeper.

  • Ground beef tacos

      Made using 750g 10% fat beef, one heaped teaspoon of Barts mild chilli powder, and otherwise followed the recipe. NPR, left on keep warm for 3 1/2 hours with lid slightly ajar. Served in a bowl on a tortilla with chopped avocado, cheese, red onion and fresh coriander. Really tasty and so simple to make.

      The ingredient list for balsamic vinegar is actually for a balsamic vinaigrette, which calls for evoo, vegetable oil, red wine vinegar, balsamic vinegar, Dijon mustard, brown sugar, and garlic.
