      This is a great way to make sliders for a family when you can’t cook outdoors. I’ve made them numerous times. Way less messy than making them on a stovetop. The one-pan method works really well, though I’ve also used a skillet to soften the onions while the oven preheats to save time.

  • Chicken and herb quesadillas

      This method is really great. The quesadillas come out crispy on both sides, but light, almost like pastry. It’s an efficient way to make them by the batch for the family, but the texture is the best part. A keeper.

      I’m obsessed with this recipe. I love the toasted panko for breadcrumbs, and the broccoli is so tender and flavorful. I almost always meal prep some chicken for the week, so that saves cook time. I can usually make three meals out of this- and I always eat it all! Definitely on rotation lately.

      This was fine, good even, but a little fiddly. Also I want to note that corresponding photo in the book appears to show a completely different dish. Sauce was good, chicken came out well. Too few vegetables for the amount of meat in my opinion, and the sheet pan was too crowded to add more. The overcrowding prevented the veggies from roasting very well. Probably won’t repeat as a whole, but I’d make the teriyaki baked thighs on their own again and just cook some veggies separately.

      Not bad. The sauce is very tasty. I think it'd be better with convection mode in the oven, and possibly with boneless skinless thighs instead of whole legs (and longer veggie cooking time but shorter chicken time).

      Oat milk works fine if you are dairy free, and nutritional yeast is a good sub for the Parmesan.

      Best to make the broccolini on a separate sheet pan. Cooking to 135 carries over to 151, which is a great temp.

      The recipe could be a little more specific about the pizza dough. I tried the pizza crust from a can, and it didn't turn out well. Next time I’m going to try a prepared crust. If that doesn’t work, I’ll try frozen dough. I didn’t put the eggs in wells like the recipe called for. I whipped the eggs and poured them over the cheese just like my favorite pizza place does.

      I have been making this recipe for my family from ATK’s website for a while now. It’s a staple for us, so I’m happy to see it in the book. It’s not the best French toast recipe I’ve had, but it’s still delicious and sooo convenient with 3 little kids. I always double it and freeze what we don’t eat. The slices can be popped in the toaster straight from the freezer and treated like an Eggo. Only one side of the bread gets pretty in the sheet pan, but I just serve it with that side up.

  • One big pancake

      We enjoyed this and given how convenient it was to make such a big batch, though I think it calls for too much flour compared to other recipes. With some tweaks, it will probably become a staple for us just like the French Toast in this book. Not as good as regular pancakes, but a time saver when trying to feed kids before school. Love the ability to freeze it for meal prep. Some fun ideas for toppings too.

      Quick, easy, tasty. The the seasoning is pretty mild, but versatile. These shrimp would be at home paired with any number of meals.
