  • Turkey and pork meatballs with orecchiette pasta and spinach-almond pesto

      We used gluten free pasta; didn't have artichokes, so threw in some roasted red peppers; didn't make the spinach-almond pesto, just added some almonds at the end with wine, lemon and parmesan. Will make it again and make the spinach-almond pesto, nice meal, great meatballs. Used gluten free flour for the meatballs.

      Very good - I loved the combination of sweet and tart. Served this with the char siu pork sopes from the same book.

  • Seared elk loin with cauliflower and fingerling potato mash, and pickled cauliflower

      Worth the effort. I used filet mignon instead of elk. The mash wasn't totally necessary, I think a simple garlic potato mash or cauli-potato mash would be fine. I should have pickled the veggies overnight for a stronger flavor. I used dried rosemary for the crust on the meat, fresh would have been better.

      Really good play on sweet and savory. Don't use cinnamon waffles though, like I did!

  • Corn sopes with char siu pork and pickled Asian slaw

      In my husband's words, this was "epic". I couldn't find char siu sauce so I made one from the book Wicked Healthy. I used pre-made sopes that I baked at 400 degrees for 17 minutes (at high altitude). The flavors and textures of the sopes, sauce, BBQ pork, and slaw worked beautifully together.
